Things are looking up a bit. My last labs showed my eGFR had climbed to 67% kidney function, which technically puts me up in Stage 2 Chronic Kidney Disease. So you CAN have an impact on the disease if you really apply yourself to the dietary guidelines. All I have done differently is to really tighten up on portions sizes of allowed foods and started taking astaxanthin, which is purported to have several renal benefits. Picked up my water intake as well. I continue to lose weight, but only being allowed 3 oz meat at a meal will do that. Trying to add in plant-based protein more now, too. It’s easier for the kidneys to handle than meat protein.

I’m sorry I’m posting fewer recipes now, but it’s so dang time consuming to track/log what I’m eating/cooking for 3 daily meals, before I know it it’s time for bed! So many trackers just don’t give you Phosphorus values. Google AI has become my personal food-tracking guru on Phosphorus. 🙂
So far my A1C hasn’t elevated on this diet :), but it hasn’t gone down either :(. I do worry about that and try not to overdo the fruits they insist we eat on this regimen. Having been a low-carber for so many years, I’m still having trouble getting my head wrapped around being allowed to eat foods a low-carber just doesn’t eat. Portion size has me counting he grapes and blueberries I eat, seriously. The do allow many vegetables, but I can’t have too many leafy greens. Cooked spinach almost not at all. It has off-the-chart Phos & Pot when cooked……….but raw it is low in Phos, so I’m having a lot in salads nowadays. Really must watch portions on green vegetables, and pumpkin, winter squashes are extremely limited. 😦 Dairy is extremely limited. Me and all my beloved cream sauces are a thing of the past, sadly to say.
All in all, I’m getting into a daily routine on food nutrient tracking, meal logging before I eat it, and am actually finding the restricted portions don’t leave me feeling hungry after every meal anymore. The continuing weight loss is always welcome. Maybe I’ll get back to my college weight yet before it’s all said and done!
Hope my nearly 2-decade low-carb followers are happy, healthy and staying hydrated to protect their kidneys from what I’m dealing with. But when I think I think I’m bad off, I just take to heart those on my FB CKD group already on or facing dialysis……or a transplant. Then I can smile and keep on trucking.
