I love making homemade simple syrups, especially making fun flavors to add to my coffees at home. Some of my favorites are my brown sugar syrup, sugar cookie syrup, honey lavender syrup, and blueberry simple syrup. Today, I’m sharing my new favorite that I made recently, banana simple syrup!

Why You’ll Love This Recipe

  • You can make as much or as little homemade banana syrup as you’d like! One of my main reasons for making my own simple syrups is so I don’t have to commit to a huge store-bought bottle. A cup I can use within a week and then make a fun new flavor to keep things interesting.
  • It’s so easy to make simple syrup at home! It only requires 3 to 4 ingredients and you can whip it up in less than 30 minutes!
  • I mentioned that you don’t need a ton of ingredients to make this, so it’s also quite a budget-friendly recipe. You probably have everything at home to make this!

Ingredients You’ll Need

banana — instead of using a banana extract, this homemade banana simple syrup uses a fresh banana!

sugars — I use a mixture of brown sugar and white syrup. The brown sugar adds a deeper, caramel-like flavor to the syrup that pairs really well with the fresh banana flavor but a full cup will overpower it, so I cut it with white granulated sugar. Don’t want the caramel notes? You can replace the brown sugar with more white sugar.

How to Make Banana Simple Syrup

  • Add the banana slices, brown sugar, white sugar, and water to a saucepan.

  • Bring the mixture to a simmer over medium heat, stirring throughout to help the sugars dissolve, and simmer for 5 minutes.
  • Once the banana slices has softened, start mashing the slices with your spatula and continue to simmer for 5 to 10 more minutes.
  • Place a fine mesh strainer over a bowl or large measuring cup and strain the banana simple syrup through, making sure to press down on the mashed bananas to get every single drop out!
  • Let the syrup cool to room temperature and transfer to an airtight container before storing in the fridge or using.

Recipe Tips and Notes

  • Make sure you are simmering the syrup and not letting it boil continuously as you don’t want too much water to evaporate.
  • If you want the caramel notes of the brown sugar to be less pronounced, you can replace some of the brown sugar with white sugar.
  • This simple syrup is not just for your lattes! Use them in your cold foams, drizzle it over a bowl of ice cream or over some pancakes and waffles! I also like to pair it with matcha, lemonades, and teas!
  • The more ripe your banana is, the sweeter it will be. The banana flavor will also be more strong.
  • A dash of cinnamon will give your syrup more of a banana bread flavor.
  • You can easily double this recipe if you have plans to use more than half a cup’s worth within 2 weeks. I usually make a smaller batch than my usual simple syrup as banana simple syrup is not something I can use up as quickly as my brown sugar syrup.
